Yes, the name of the post was given on purpose. This is a “vegan lunch idea”, no “recipe” as it is so easy – but still super delicious and extremely pretty. Have you ever seen such a bowl full of goodness?
It’s the perfect summer meal as it is refreshing and not so heavy and you can change every single ingredient and put in your bowl what’s in your fridge or garden. So practically you could eat this every day – have fun experimenting! ;)

A bowl full of goodness | Vegan lunch idea
What you need:
crispy baked falafel (for example THIS recipe – but don’t forget the sesame!)
oil + veggies for baking (I had potatoes, carrots and zucchinis)
fresh veggies (I had a few salad leaves and tomatoes)
fruits (I had cherries and blueberries)
seeds (I had pumpkin seeds)
nuts (I had pistachios and peanuts)
chutney or hummus (my chutney was made by my mom but you could try THIS recipe or simply buy one)
spices (such as salt and oriental mixes)
pita bread
optional: pumpkin seed oil + lemon juice for the salad
How to make it:
1. Preheat the oven to 200° C. Cut your veggies (except the fresh ones) in pieces, cover them with a little oil, salt and spices and bake them until they are crisp and yummy.
2. Prepare the falafel according to your recipe. There are also a bunch of falafel mixtures in our supermarkets today, so if you feel super lazy today, you could give them a try ;)
3. Prepare the fresh veggies (cut the tomatoes,…) and put them in a bowl. Add falafel, baked vegetables, fruits and decorate with chutney, seeds and nuts. If you prefer your salad with oil, add pumpkin seed oil and lemon juice (or vinegar if you prefer).
4. Enjoy this beautiful vegan lunch idea with pita bread in your garden or on your balcony!
