So this is our latest recipe, perfect for your next party or every other occasion (e.g. Netflix-date on the couch). Perfect, crispy and super-delicious; with a whole bunch of vegetables inside. Here comes the recipe for a very uncommon “strudel”!

Strudel-Päckchen, vegan. Asiatisch Steirisch gluten-frei soja-frei wintergemüse Cashewkerne rote Rüben Kartoffeln Karfiol Erbsen

Styrian-Asian “Strudel” | vegan, gluten-free, soy-free

What you need:

1 onion
1 big potato
1 big carrot
1 small piece of cauliflower
1 piece beetroot (approx. as big as the potato)
1 small cup peas (fresh or frozen)
1 tsp vegetable broth
pepper
pinch of rosemary

vegetable oil (eg. coconut or sunflower)
1 tbsp polenta or rice flour

ca. 15 pieces of rice paper

How to make them:

1. Preheat the oven to 200° Celsius.
2. Cut the onion and roast it gently with some oil in a pan.
3. Grind all the vegetables (except the peas) or cut them in small pieces. Roast the potato and beetroot shortly with the onions. Remove from heat.
4. Add the rest of the vegetables, as well as vegetable broth and spices. Stir well.
5. Take a rice paper piece and put it in cold water for about three minutes. As soon as it is soft, remove it and fill it with a tablespoon full vegetables. With the paper form little packages and put them on a baking tray with parchment paper.
6. Do this again until there is no filling left anymore.
7. Grease the little packages with some oil and put them in the oven for 15 minutes. Remove them from the oven, turn them and bake them for another 15 minutes. If you prefer them extra crispy, also grease the other side after turning them and leave them in the oven until they are golden-brown.
8. Serve immediately and eat while they are hot and crispy. Yummy!

Tips:

  • Add roasted nuts to the filling for an extra crunchy and delicious touch.
  • Don’t put too much filling in the rice paper pieces in order to avoid breaking them.
  • Eat them fresh and hot; don’t put them together for a long time (otherwise they might lose their crispness).
  • AND THE BEST: This recipe is just AWESOME because you can switch the filling with whatever you like! No matter if Asian, Styrian or the leftovers from the day before: I tried them all and they are all absolutely delish! ;)
