Vegan Pumpkin Gingerbread Energy Balls
What you need:
1 1/2 cup pumpkin, cut in small pieces
15 dates, pitted (very important! ;) and soaked in water for at least 5 hours
2 tbsp chia seeds
1 tbsp flax seeds, ground
1 tbsp cacao powder, unsweetened
1 1/2 tsp gingerbread spice
1 tsp ginger, ground
cinnamon to taste
1 pinch salt
optional: coconut flour
cacao powder for decoration
How to make your Pumpkin Gingerbread Energy Balls:
1. Cook the pumpkin pieces with some cinnamon in some water until very soft. Remove the excess water.
2. Put your dates in a blender (be sure that all stones are removed) and blend until smooth. Add the soft pumpkin and blend again. The mixture should be very soft and homogeneous.
3. Now add the seeds and blend and mix again. If the mixture is too moist you can add some coconut flour until it is well formable.
4. Form balls and roll them in cacao powder. Enjoy!
