Time flies and – bang – there are only another twelve days until November is over. To be honest: Even though the weather isn’t Christmassy at all here in Graz I’ve already started thinking about Advent all the time. There is not only Christmas lighting in my room but also cinnamon seasoning all over my food. And now I also started baking – sorry, making – raw gingerbread squares and all I say: They turned out de-li-cious.
Truth be told, you must not count calories while eating them but at least they are sugar-free and out of healthy and nutritious ingredients. Try them!
What you need:

* 2 cups pitted dates
* 1/2 cup raw buckwheat
* 1/2 cup raw, ground walnuts
* 1/2 cup raw, ground hazelnuts
* Gingerbread seasoning (or a mixture of cinnamon, cloves, cardamom, pimento, nutmeg and ginger)

As topping:

* Chia seeds
* Flax seeds
* Ground walnuts
* Raw cocoa
* Peanut butter

* Coconut oil for the cake pan
How to make them:

1. Soak the dates in warm water until they are soft (at least one hour). Now grind them until you have a sticky and almost homogeneous mixture.
2. Add nuts, buckwheat and spices and mix again (shortly this time).
3. Grease a cake pan with coconut oil and sprinkle seeds, nuts and cocoa in it. Press the date-mixture in the pan and put some other nuts (and so on) on top.
4. Let it rest for some time on a cold place, then cut into squares. I tried one of them with peanut butter and I was amazed – as I said, don’t count the calories but at least they are more than yummy. Have fun trying them!
