I love a good smoothie or a good smoothie bowl. The combination of fruits and veggies, sweet but not too sweet and just delicious. But often I miss something to chew when drinking them in the morning. Thus I often eat porridge or over night oats but oats every day can be boring sometimes. So I developed this recipe: A mixture of smoothie and mash/porridge with some yummy toppings to chew. The mixture of pumpkin, spices and banana tastes like autumn in a bowl and like liquid pumpkin pie, so really yummy!

Pumpkin Pie Smoothie Bowl | Vegan
What you need
1 cup warm, cooked pumpkin purée
1 cup oat milk (or rice milk, if gluten-free)
1 banana
Pumpkin spice or gingerbread spice
ground walnuts, as much as you want
different toppings
(I had sliced apples, frozen cranberries, dried plums, walnuts, aronia berries and even more pumpkin spice)
How to make it:
1. Put all the ingredients in a blender and blend until smooth. Decorate with your favourite toppings and serve immediately while the smoothie is still warm.
Tips
Wait with the cranberries until you serve the smoothie bowl – by doing that you’ll get a nice, white frost effect.
Environmental tip: Don’t buy new and green bananas but have a look if your local grocery store sells spotted bananas for half the price. By buying these you save fruits from the litter bin, have the perfect, sweet bananas for your smoothie AND save money. Or, even better: You even take the bananas that have already been thrown away.
If the smoothie is too liquid add some oats and wait for a few minutes until they are soft, if you need more liquid, add some more oat/rice milk.
If it is not sweet enough, add some maple syrup or mix soft dates or plums in the smoothie.
