Everyone likes brownies, I guess but these brownies are something really special: Rich and yummy, super-delicious and still very healthy! Vegan, no sugar added and not only gluten- but entirely flourless! Thus they are moist and sticky but because of the combination of baking powder and vinegar still very fluffy, almost unbelievable that there’s no flour in them!
You think this is another bean-brownie recipe? Well, you are wrong. These brownies consist of nothing else than dried fruits, seeds, nuts and some spices, the most amazing combination ever. But you are a bean-brownie lover? Have a look at our previous recipes HERE and HERE! :)
Healthy, flourless brownies | vegan, gluten-free
What you need:
1 cup dates, pitted (I had 15 pieces)
1/4 cup water
3 tbsp natural peanut butter, unsweetened (or other nut butter if you don’t like peanuts)
4 tbsp carob powder (or cacao powder, if you prefer)
1 tbsp ground flax seeds
cinnamon
1 tsp baking powder
1 tbsp apple cider vinegar
Oil for greasing the pan
How to make them:
1. Preheat the oven to 180°C. If your dates are not soft enough, soak them in hot water for some minutes. After some time, put them together with the 1/4 cup of water in a blender and blend until the dates are very smooth and sticky.
2. Add peanut butter, flax seeds carob powder and cinnamon and mix again shortly until everything is well combined. The batter might be quite dry now but wait for the next steps, I’m sure this will change soon.
3. Grease a small baking pan (mine was a glass one and about 25x15cm or something like that). Now add baking powder and vinegar to the batter and mix again very shortly: Your batter will be much smoother and moister now! If you still think that there is some water missing, add one or two table spoons. Then put the batter in the pan.
4. Bake the brownies for about 15 minutes. Let them cool off and cut in pieces. Enjoy!
Tips
Of course you could make double batter for even more brownies but believe me, the amount is good. Even though these brownies are super-healthy and amazingly delish you can’t eat more than two small pieces as they are really rich and chocolatey.
The dates make them very sweet (so please, please don’t add additional sugar!), if you don’t like it that sweet, consider adding more nut butter or less dates.
