Is there anything better than breakfast in bed? Oh yes. ICE CREAM for breakfast in bed. And in honour of today’s Ice-Cream-For-Breakfast-Day we have a perfect ice cream recipe for you. Of course it’s vegan and sugar-free, as always but much more festive. Nicecream supreme so to speak!
The base of this ice cream variation is bananas (of course!) but I took it to the next level by adding coconut cream, peanuts and these lovely, healthy brownies I showed you last time (recipe HERE). You could take every brownie recipe you want but I wanted the stay entirely sugar- and gluten-free.
You might know it already: This nicecream is heaven in your glass. You DEFINITELY have to make it (but who would say “No” to ice cream as breakfast in bed, right?)! And if you don’t have time today, try it as a lovely present on Valentine’s Day. Start freezing now!
Brownies and cream nicecream | Vegan, gluten free, sugar free
What you need:
2 very ripe, small bananas, frozen (cut into pieces before freezing!)
4 frozen coconut milk cubes (so coconut milk frozen in ice cube forms)
1/4 cup plant-based milk (e.g. oat milk)
2 pieces vegan, gluten-free brownies (Recipe HERE)
Peanuts, as many as you like
a few peanuts and a small brownie as decoration
How to make it:
1. Put milk, bananas and frozen coconut milk in a blender and blend until very smooth.
2. Break the brownies into pieces and add them together with the peanuts to your nicecream. Stir slightly.
3. Put the ice cream into a glass or bowl, decorate with brownie pieces and peanuts and serve immediately. Enjoy, preferably in bed ;)
