I’m not a huge salad-fan as I need something hot as lunch or dinner. But if it is warm and with loads of different vegetables and on top of that even really quickly prepared I’m open for new things! So I came up with the idea of this warm couscous salad, a bowl full of goodness. And honestly: It was one of the best things I’ve ever eaten as it has so many different tastes in one meal. Pure love!
What you need:
- 1/2 cup couscous & 1 cup boiling water
- Salt & curry spices
- 1 small sweet potato (or 1/8 big one)
- Cinnamon
- 1 red onion
- 1 tbsp maple syrup & some water
- 1 tsp peanut butter & 5 tsp hot water
- 1/4 avocado
- 2 small carrots
- 1 handful rocket
- 1-2 pickle
- Sesame
How to make it:
1. Cut the sweet potato in small pieces and cook them in a pan until soft. Add cinnamon and set aside.
2. Cut your onion into rings and roast them on both sides. Mix maple syrup with a bit water, pour it over the onion rings and cook until the water is gone. Set aside.
3. For the couscous mix boiling water with salt and spices and pour it over the couscous. Set aside.
4. Cut the pickle and avocado into pieces and rasp the carrot.
5. Now you are ready to prepare your bowl: Put all your goods into it and decorate with sesame. In the end mix peanut butter with some hot water and pour it over your dish. Ready is your warm couscous salad!
Notes:
You could take quinoa instead of couscous for a gluten-free version.
If you are not into peanuts you can use a nut butter of your choice or any other dressing for a nut-free version (soy-yogurt for example).
Instead of maple syrup you could just mix some brown sugar with water. Enjoy!
